Well, in a way it's about the audience, too...after all, these remakes etc *do* get signigicant attention, usually much more than movies containing new concepts or original ideas.
In away, yes, the stories are told again and again...but then, only because they are good.
Having said that, there are a lot of remakes/reboots which produced (IMHO, of course) better results than the originals.
-Batman (the dark knight movies with Bale) - compare that to the cheesy 60's series or the more direct prequels like "Batman&Robin"
-Battlestar Galactica series
-Sherlock
-Superman (haven't seen the reboot, admittedly, but consider the original movies horrible so it can't be worse)

And there are surely more than that.
ps: my favourite for a reboot: CAPTAIN FUTURE!!!!!
