The term double jointed sounds better than it really has a practical application for. A girl in my gymnastics class was double-jointed, but that just meant she could pop her elbows out both ways. Think about trying to tie someone like that and it's pretty impossible.
Flexible wins out every time, because the more flexible someone is, the easier it is to get creative (hands behind a pole or tree, stricter hogties, elbows bound) with more options. Plus, they can stay tied longer more comfortably.
Walk the mile first... then have the fun!
